My love for all things chicken!


This pic above was taken in Kauai, Hawaii in 2009 while on vacation....after a long hike in Waimea Canyon, we came across a woman surrounded by chickens and were quite amused, so took this photo. Recently, I was thinking about......why do I love eating chicken? I started thinking of my youth and all the ways chicken was served to me & my family. We had grilled Grecian chicken, chicken noodle soup, grilled chicken smothered in barbecue sauce, chicken curry(my Dad's recipe from his days in Burma), chicken salad sandwiches, chicken cacciatore(my Mom rocked this), chicken tettrazini, chicken with orange slices on top....to name a few! Oh wait one more....our weekend morning breakfast with chicken livers, smothered in lemon juice!!!! Yum!

I think chicken is so universal because it's always been affordable, stretchable (in that one chcken can provide lots of meals, and that carcass makes such a great soup starter), and flexible (fancy or simple, flavors from around the world). My mom made an amazing chopped liver, and my family loves a simple roast chicken.   2. Definitely affordable, especially when you're feeding 8 (6 boys) children like Mom and Dad had to! Your Mom made chopped liver! Impressive! Do you have that recipe? Or was it she put in little bit of this and a little bit of that? Thanks for the recipe...we will definitely have to try this! Love Epicurious! Best food recipe website on the internet!
